EVERYDAY RECIPES: PUMPKIN APPLESAUCE MUFFINS

After taking our annual apple picking trip up to North Georgia, I started looking for ways to use up the abundance of apples that we picked. The first thing I did was make a huge batch of homemade applesauce. After a few days, although it was delicious, my two year old was getting kinda bored with it. Not wanting all that applesauce to go to waste, I decided to use it in a few recipes. These pumpkin muffins turned out amazing!
What you'll need:
3/4 cup canned pumpkin puree 2 large eggs, room temperature 3/4 cup unsweetened applesauce 1/2 cup packed light brown sugar 1/2 cup granulated sugar 1 3/4 cups all-purpose flour 1 teaspoon baking soda 3/4 teaspoon salt
2 1/2 teaspoons pumpkin pie spice
Preheat oven to 375. Mix all ingredients together and put in lined muffin tin (makes about 16 muffins). Bake for 20-25 minutes (keep an eye on them after 20 mins).
Any old muffin liner will do, but I used parchment paper cut into 5 inch squares to give them a little more of an artisan feel.
