EVERYDAY RECIPES: RESTAURANT STYLE CHEESE DIP


Ahhh nothings says Christmas like queso, amiright? Jokes aside, I personally think that cheese dip is appropriate for any time of year! If you're looking for an easy way to satisfy a group this holiday (or just a quick, warm, cheesy snack for yourself) this recipe is perfect. I stole it from my friend Beth who made it during a girl's weekend for all of us. It was, in fact, genius.

What You'll Need:

1 lb. white American cheese from the deli (have them slice it thick so you can cube it)

1/4 c. half & half or whole milk (or a mixture of both)

1 can diced green chilies

1/2-1 tsp. cumin (to taste)

salt & pepper

How to Make It:

Add the cubed cheese to a pot over medium heat. I like to use a cast iron pot but you can use whatever type of pot you have. While the cheese begins to melt, add the half & half and stir continuously until smooth. You may add a little more milk and/or half & half depending on the of consistency of queso you prefer (more milk = thinner. Less milk = a little thicker).

Once the cheese has melted down and is smooth, add the green chilies, cumin and salt and pepper (to taste).

Serve with your favorite tortilla chips and enjoy!

p.s. this re-heats beautifully as well, so make sure you save those leftovers (if there are any).
