EVERYDAY: FALL FUN WITH VOORTMAN COOKIES

One of my favorite things to do with the kids is to decorate cookies during the holidays. I came up with a super easy way to make some fun monster cookies & ice cream sandwiches for Halloween using Voortman's new fall flavor - Pumpkin Spice! They are baked with real pumpkin and made with no artificial colors or flavors AND no high-fructose corn syrup so they taste super yummy!
I also love these because they are pretty fool proof. No pinterest fails here!
Here's what you'll need:
Voortman's Pumpkin Spice cookies & wafers
Candy eyeballs (check your local store's holiday section)
Holiday sprinkles (check your local store's holiday section. We used these and these.
White chocolate squares for melting and dipping
Vanilla bean ice cream for sandwiches
For the sandwiches: Let the ice cream soften and smoosh in between two cookies. Place in freezer to firm up. After about 30 mins, pull them out, trim off the edges, roll in sprinkles and serve!
For the cookies: This is where you can get creative and make whatever kind of monsters you would like! We made mummies by squeezing frosting back and forth over the cookies and adding eyes. We also made some one eyed cyclopses with white chocolate, candy corn and of course EYEBALLS!
